Marinated Meat Skewers with dippings · The Thai Satay BBQ

There are three elements to a Thai Satay:
1. marinated meat skewers,
2. peanut dipping sauce,
3. and the sweet & sour dipping sauce known as Nam Jim Satay.

To eat take a piece of meat, add some Satay sauce and a little Nam Jim on the spoon. Each element provides striking contrast in terms of flavour and texture (typically Thai) but when combined the result is truly delicious.



INGREDIENTS LIST

For the marinated meat:

  • 500g chicken breast/ pork steak/ beef steak, cut into slices
  • 2 teaspoons Thai Gold Nam Plaa Fish Sauce
  • 2 teaspoons Thai Gold Light Soy Sauce
  • 2 teaspoons Thai Gold Oyster Sauce
  • 1 teaspoon sugar
  • 1 teaspoon ground turmeric (or curry powder if no turmeric)
  • Some Thai Gold Coconut Milk for brushing the meat.
  • For the Peanut Satay dipping sauce:

  • 230g (a jar) Thai Gold Peanut Satay sauce
  • For the Nam Jim dipping sauce:

  • 4 tablespoons rice vinegar or white vinegar (rice vinegar is smoother)
  • 1 teaspoon salt
  • 3 teaspoons sugar
  • 1 red onion, finely sliced
  • ½ chili, finely sliced, a full chili if you like it a bit spicier
  • ½ cucumber, quartered and sliced
  • 10 coriander springs, roughly chopped



PREPARATION

For the marinated meat:

  1. Marinate the meat slices with all the ingredients for about 30 minutes (60 minutes for beef) and then skewer.
  2. Cook on a medium heat barbecue, brushing with coconut milk frequently (repeat until cooked).

For the Peanut Satay dipping sauce:

  1. Just heat the jar content.

For the Nam Jim dipping sauce:

  1. Mix vinegar, salt and sugar and stir until the salt and sugar dissolve.
  2. Add the chopped ingredients.
  3. Serve in a side bowl.
